We ended up going with a regular marble cake c/o Betty Crocker and an adapted homemade cream cheese icing with 1/4 of the sugar and chocolate. She loved it.

We didn't make a cake per se for my kids first birthday, but we made cupcakes which is just a variation of a cake. We got the recipe from Vegan Cupcakes Take Over the World
